It sure looks good!! This recipe was given to my son by his co-worker Mike. I haven’t tried it as yet but my son says it’s excellent!!
Sausage & Potato Soup
5 lbs of potatoes
2 blocks of crème cheese
2 packages of ekridge SKINLESS sausage
Shredded cheese(optional)
Bacon Bits(optional)
Tabasco (optional)
-Peel and cut up you potatoes( depending on how you want your soup is how you cut them, cut them fine if you want your soup to be thick, or bigger pieces if you want the soup runnier )
- bring Potatoes to a boil and make them soft, DO NOT DRAIN YOU KEEP THE WATER THEY BOILED IN( now here is where your decision on the thickness comes in) if you want your soup to be on the thick side get to mashing the potatoes in the water stock. And if you don’t want to do that step you can always mash them in the bowl as you are eating, I just prefer to do it while I’m cooking them.
-cut up the sausage (into fourths or whatever thickness you would like), and the cream cheese and throw them into the pot with the potatoes and the water that you did NOT drain.
-reduce heat, as soon as the cream cheese is all melted you are ready to eat to, the longer the soup sits and cools like on low heat the thicker it will become
-add cheese and bacon bits and hot sauce as you please per bowl
